Indian spice mix. Preparation suggestion. Required: 250g of chickpeas, 1 tsp. ginger paste, 1 tsp. garlic paste, 250g finely chopped onion, 2 tbsp. Chana Masala mixture, 250g finely chopped tomatoes, 2 tbsp. chopped coriander leaves, salt and chili to taste. Preparation: 1. Soak the chickpeas overnight in water. 2. The next morning, drain the water, boil with a pinch of soda until the peas become soft and almost dry. 3. Heat 5 tbsp. ghee butter, add ginger, garlic, onion, fry until golden. Add spices, salt, tomatoes and cook until the mass becomes dry. Then add the chickpeas, a glass of water and continue heating until a thick sauce forms. Note: Chana or chickpeas are traditionally eaten with Bature Indian bread along with fresh onion and lime salad, but any bread can be used. Store in a dry and cool place.
