Curry paste is a moist blend of ground or pounded herbs and/or spices and other seasonings. Curry paste is primarily known as an important ingredient in Thai cuisine, and it can also be a generic commercial product which substitutes curry powders or spice blends used in other cuisines. Curry pastes are really easy to use. The trick is to fry them in a little water until they are fragrant. Red curry paste will particularly bring out the taste of chicken, fish or red meat. Recipe recommendation (for 2-3 people). PREPARATION: 1. Mix 400 ml of coconut milk with 4 tbsp. of vegetable oil and cook over medium heat for 2 minutes. 2. Add 50 g of curry paste and mix for another 2 minutes. A thin layer of oil will form on the surface. 3. Add 200 g of your favourite meat (fish or chicken) and 120 g of finely chopped aubergine. 4. Pour in 1/2 tbsp. of fish sauce and add 1 2/3 tbsp. of palm sugar. 5. Add 110 ml of water and cook for another 10 minutes. 6. Add basil leaves, fresh chilli pepper and ka
