Aka, also called red miso, is a type of miso made with a higher concentration of soybeans. It is fermented for up to three years. Aka Miso is reddish in color with a saltier and more intense flavor than Shiro Miso. Kikkoman Aka Miso Soup is topped with Wakame seaweed, scallions and Yaki-fu to make it more delicious and nutritious. Wakame seaweed is an excellent source of iodine, vitamins, minerals and antioxidants. Yaki-fu is fried wheat gluten (similar to breadcrumbs) that adds texture and carbohydrates to the soup.
