It has a syrup-like texture, which not only gives the food a light sweetness, but also a beautiful shiny glazing. It is used in boiled dishes and glazing sauces as well as at the end of the cooking to achieve an exquisite sweetness and strong aroma. The main advantages of using mirin – it gives a gloss to sauces and glazing; helps eliminate the specific aroma of fish and other sea products; has some thickening properties.
