  1. Finely grate the lime zest and squeeze out the juice.
  2. In a saucepan, combine the rice, grated lime zest, coconut milk, and water.
  3. Cook for about 25 minutes, stirring gently from time to time.
  4. Once the rice is cooked, add the sugar and heat gently, stirring until fully dissolved.
  5. Remove from heat and let cool slightly.
  6. Add the lime juice and mix well.
  7. Allow the pudding to cool completely and serve chilled.
