Rice Pudding with Lime
Recipe for 4 servings.
Ingredients:
- 175 g FUDO Sushi Rice
- 2 limes
- 400 ml FUDO Coconut Milk
- 425 ml water
- 100 g brown sugar
Instructions:
- Finely grate the lime zest and squeeze out the juice.
- In a saucepan, combine the rice, grated lime zest, coconut milk, and water.
- Cook for about 25 minutes, stirring gently from time to time.
- Once the rice is cooked, add the sugar and heat gently, stirring until fully dissolved.
- Remove from heat and let cool slightly.
- Add the lime juice and mix well.
- Allow the pudding to cool completely and serve chilled.
