White mushrooms are edible and grow on the trunks of various deciduous trees in Asia. Also known as snow fungus, white wood ear and Tremella fuciformis. They do not have an intense aroma, but have a crisp texture. To prepare dried white mushrooms, they must first be soaked in cold water (soak until the middle is soft). Traditionally used in the preparation of Chinese soups, but goes just as well with other dishes. Raw.
