Tamarind is an essential flavouring in Asian traditional cuisine. Other names: "tamarind pulp", "sour soup base" (Thai), "Tamarind concentrate". Mostly used in Thai and Indian cuisine. Tamarind paste is the pulp that surrounds the seeds of the tamarind pod. Tamarind is the pod of a tree native to Africa, but now mostly cultivated in India. The paste gives food a sourish taste. It is used in Thai cuisine to prepare the traditional savoury hot and sour soup. This paste may be used to make delicious BBQ and other savoury sauces, as an ingredient in marinades, curry, bean, and other legume dishes, as well as any other dish that needs to be a little more sour.
