"Nikanpyo" is a pickled calabash. Calabash was one of the first cultivated plants in the world, grown not for food but as a container. "Nikanpyo", also known as Gourd is pickled veg, used widely as filling for sushi rolls. Nikanpyo is a great filling for small vegetarian sushi rolls (hosomaki). Pickled gourd slices of the Calabash gourd also known as the Bottle gourd. Nikanpyo is an ingredient in traditional Edo style Japanese cuisine. It has a soft and fibrous texture with a tangy taste. Nikanpyo is also commonly used in futomaki, large sushi rolls.
