Fish sauce is widely used in Thai cuisine and is produced from fermented fish. It has a salty flavour and a very strong and distinctive aroma. It gives Thai food a special flavour and is used in the same way as salt in in Western cuisine and soy sauce in Chinese, Japanese cuisines. Add a little fish sauce when cooking a classic Thai curry, Tom Yum soup or rice noodle dish (Pad Thai). Add garlic, chilli pepper, brown sugar, and lime juice to get a delicious salad dressing.
